Brussels Sprouts Salad
It’s a common misconception that kids hate Brussels sprouts! In food literacy class our kids love this seasonal, crunchy salad topped with a citrus mustard dressing!
Citrus Mustard Dressing Recipe
- Juice and zest from 1 orange (about 1/2 cup)
- 1/2 cup olive oil
- 1 Tablespoon brown mustard
Instructions for adults:
Cut orange in half.
Instructions for kids:
Squeeze orange juice into a jar. Add zest, olive oil, and mustard. Close jar and shake vigorously to combine. Add to Brussels sprouts salad.
Brussels Sprouts Salad
Ingredients:
- 6 cups Brussels sprouts, shredded
- 2 pears, diced in 1/2-inch cubes
- 1/2 cup pecans
- 1 cup Citrus Mustard Dressing
- Salt and pepper, to taste
Instructions for adults:
Cut and prep the vegetables.
Instructions for kids:
Add all ingredients to a large bowl. Mix in dressing. Add salt and pepper to taste. Serve and enjoy.
